Gunda Pickle
Gunda, also called lasoda, turns sticky the moment it is picked even slightly late, so the window is a few weeks in early summer. Each berry is deseeded by hand before it goes anywhere near the masala, which is the slow part of making this one. Salted, briefly sun-dried and then packed in mustard oil with crushed mustard seed, it softens over a fortnight into something quite unlike any other jar in the range.

Contains mustard. Prepared in a facility that also handles other spices. The batch-specific declaration is printed on every pack — always check the label if you have an allergy.
Taste profile
Gunda has almost no sourness of its own, so the mustard and salt carry it. Soft berries with a slippery bite and a thick masala clinging to them.
Best enjoyed with
Use a clean, dry spoon every time and keep the oil layer covering the pickle — that layer is what preserves it. Oil separating or rising to the top is normal; stir gently before serving.
Store it right. Keep the flavour intact.
Twelve months from the batch date printed on the lid. Store in a cool, dry place away from direct sunlight — no refrigeration needed, before or after opening. Keep the jar closed between uses and never introduce moisture or a wet spoon, which is the one thing that will spoil a pickle early.
