Mango Pickle
Green mangoes are picked while still hard, cut by hand with the stone left in, and layered with rock salt for three days to draw out their water. Once dry they go into mustard oil with a whole-spice masala and rest until the pieces turn glossy and take on the oil. The result is sharp and sour up front, with the heat arriving after.

Best enjoyed with
Use a clean, dry spoon every time and keep the oil layer covering the pickle — that layer is what preserves it. Oil separating or rising to the top is normal; stir gently before serving.
Store it right. Keep the flavour intact.
Twelve months from the batch date printed on the lid. Store in a cool, dry place away from direct sunlight — no refrigeration needed, before or after opening. Keep the jar closed between uses and never introduce moisture or a wet spoon, which is the one thing that will spoil a pickle early.
