Garlic Pickle
Every clove is peeled by hand, which is the slow part of making this one. The cloves are dried briefly, then cooked gently in mustard oil with crushed mustard seed and red chilli until they turn translucent and mellow.

Ingredients

Taste profile
The raw bite cooks out and leaves a mellow, savoury depth. Mustard-heavy rather than chilli-heavy.
Best enjoyed with
Use a clean, dry spoon every time and keep the oil layer covering the pickle — that layer is what preserves it. Oil separating or rising to the top is normal; stir gently before serving.
Store it right. Keep the flavour intact.
Twelve months from the batch date printed on the lid. Store in a cool, dry place away from direct sunlight — no refrigeration needed, before or after opening. Keep the jar closed between uses and never introduce moisture or a wet spoon, which is the one thing that will spoil a pickle early.
